Lost your ‘new year, new me’ mojo? Not to worry, everyone knows January is a practice month! Reset with these quick and easy healthy recipes.

Pumpkin and red lentil curry

Serves: 4 | Prep: 15 mins | Cook: 30 mins


  • 1 red onion, diced
  • 700g pumpkin, peeled and diced
  • 4 Tbsp homemade
  • curry paste
  • 400ml coconut milk
  • 4 cups vegetable stock
  • 200g red lentils
  • 2 Tbsp fish sauce
  • Broccoli rice (see below), to serve


  1. Fry the onion and pumpkin in olive oil on a medium heat. Cook until softened, stir in curry paste and cook until fragrant (about a minute).
  2. Add the coconut milk, vegetable stock and lentils. Bring to the boil and simmer, for about 20 minutes until the lentils are soft and tender.
  3. Add fish sauce and cook for a further three minutes or so.
  4. Serve with broccoli rice.

Broccoli rice

Simply blitz a head of broccoli in a food processor until it forms a rice-like consistency. Fry in some olive oil and minced garlic for a few minutes and serve.

Thai chicken burgers

Serves: 4 | Prep: 30 mins | Cook: 15 mins


  • 500g chicken breast mince
  • 2 Tbsp homemade red curry paste
  • 2 spring onions, chopped
  • 1 clove garlic, minced
  • 1 egg, whisked
  • 1/2 cup almond meal
  • 2 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • 1 cup fresh coriander leaves, chopped
  • Sprinkle of chopped peanuts
  • Leafy greens, cucumber and carrot, to serve


  1. Combine all the ingredients into one bowl. Shape into eight patties.
  2. Shallow fry on a low-medium heat for around six minutes each side.
  3. Serve with a leafy green salad, cucumber, carrot and chopped peanuts.
