Crystalbrook Kingsley welcomes new menu icons

Newcastle’s Crystalbrook Kingsley is one of 14 restaurants and bars to welcome Climate Calorie information on all of its menus.

The city’s only five-star resort will begin labelling all items in its dining venues with the details of its sourcing.

The information is designed to enable diners to feel comfortable that they are mitigating their environmental impact.

Climate Calories will disclose whether the ingredients in their dish are locally sourced, sustainably grown or caught, have an Indigenous connection, consciously reduce waste and were delivered to the restaurant in eco-friendly packaging.

Icons will feature alongside each dish. 

Locally sourced will indicate if a dish’s ingredients were sourced within a three-hour radius of the restaurant.

Minimise waste will identify whether the chef has used all of the ingredient to reduce any waste.

A label featuring the words ‘ethical meats’ indicates a whole beast was used, it was a line-caught fish or it was sustainably farmed.

Supplied to the restaurant in eco-friendly packaging means 100% recycled or bio-packaging was used.

Culturally considered ingredient on the menu means the meal was made using native ingredients and working with Indigenous communities.

Crystalbrook Collection CEO Geoff York said the move was a part of the group’s overall ethos.

“This is just the next step in our sustainability journey,” he said.

“This is a way our customers can feel empowered that they’re making a good environmental choice while connecting with the location and the community.

“We’re privileged in Australia to have access to such high-quality sustainable ingredients and our chefs take huge pride in their farmer and producer relationships, and sourcing local, ethical and culturally considered meat and produce.”

Climate Calories will be progressively introduced to Crystalbrook Collection’s 14 restaurants and bars from the first week of April.
